Effort Values, or EVs for short are hidden points which are earned when defeating a Pokémon. These points give bonuses to a specific stat. When leveling up via battling a Pokémon gains the bonuses in addition to the normal stat bonuses. When leveling using a Rare Candy, Pokémon do not gain any EV points and are thus weaker than a Pokémon which battled to level up.
In total a Pokémon may have up to 510 EV points. These can be divided up in anyway you like. There is a limit though, each stat can only have 255 EV points in total.

To get the most from EV training your going to want your Pokémon to have the best nature forthe stat you want to be the highest. Below is a grid for the natures of the Pokémon and what they give.
On top of finding the correct Pokémon to train against for the correct EVs and the correct natures, there are also items that can boost the amount of EV's you earn in a battle. By using these items you can cut your EV training time by half!
